Method
Step 1: Preheat oven to 150° and line a baking tray with paper. In a large bowl, combine oats, almond meal, desiccated coconut and salt.
Step 2: In a small bowl, melt coconut oil and stir in honey and vanilla. Add to dry ingredients and stir until combined.
Step 3: Spread an even layer of granola on to your lined baking tray and bake for 25 minutes or until golden. Once cooked, remove from oven and let cool, this will ensure large clusters form.
