Oven Baked Apple and Rhubarb Crumble
What's more comforting than a hearty bowl of spiced fruit paired with our golden, Oven Baked Muesli? Not only is this recipe relatively easy and quick to make, but it can be enjoyed for both breakfast or dessert (...they're the best kind of recipes!)
5 stalks rhubarb, chopped into 2cm slices, diagonally
2 apples, peeled and diced
1/2 cup water
1/2 tsp cinnamon
1/4 tsp nutmeg
2 tbsp maple syrup
Icecream or yoghurt, to serve
Preheat oven to 180°.
Combine all filling ingredients in a baking dish, and bake for 20 minutes, or until the apples have softened slightly and the water is absorbed.
For the crumble topping, mix all ingredients in a separate bowl and sprinkle over the apple and rhubarb mixture. Return to the oven and bake for a further 20 minutes, or until golden.
Serve with a dollop of ice cream or yoghurt.
