Black Bean Brownie Bites

Makes: 6 | Time: 35 minutes | Vegan | Gluten Free | Nut Free Option
Ingredients:
2 tbsp flax meal 
8 tbsp water 
1 x 400g can black beans, drained and rinsed well
1/3 cup maple syrup
2 tbsp plant milk
3/4 cup Goodies and Grains Cacao Powder 
1 tsp vanilla extract 
1 pinch salt 
1 tsp baking powder 
1/2 tsp bicarbonate soda 
Frosting:
1 tbsp Goodies and Grains Cacao Powder
1 tbsp Goodies and Grains Peanut Butter (use tahini for nut-free option)
1 tbsp Goodies and Grains Honey 
Method:
1. Preheat oven to 175 ° and line a 6-hole cupcake tray with patty-pans. In a small bowl, mix together flax meal and water, then set aside to thicken for 5 minutes.
2. Combine remaining ingredients (excluding frosting) in a blender or food processor and blend on high speed (note, the texture will still be quite thick). 
3. Add the thickened flax meal to the blender and blend again until everything is well-combined. 
4. Spoon batter into cupcake tray and bake for 19-22 minutes, or until a skewer comes out clean.
5. Meanwhile, place all frosting ingredients in a small bowl and microwave for 20 seconds. Whisk everything together until a glossy paste forms, then spoon onto your cooled brownie bites and serve!
