Bean Chocolate Truffles

Kidney beans and chocolate? Yep...it might sound a bit odd, but trust us, they taste delicious and you can't even taste the beans! These balls are a great snack to keep on hand when working from home. They're loaded with a variety of antioxidants from the cacao and chaga powders, and have a lovely light texture resembling the beloved chocolate truffle.
Time: 10 minutes | Makes: 20
Ingredients:
- 130g pecans
- 130g roasted hazelnuts
- 6 tbsp Goodies & Grains Cacao Powder
- 1 tsp chaga powder
- Pinch of salt
- 1 tbsp ground coffee beans
- 180g canned red kidney beans, rinsed and drained
- 200g medjool dates, pitted
Method:
- Place the pecans and hazelnuts into a high-speed blender and pulse until the nuts have broken down into a fine powder
- Add the cacao powder, chaga powder, salt and ground coffee and continue processing
- Add the red kidney beans medjool dates and process until everything is combined. The texture should hold together when pressed
- Take a tablespoon of the mixture and roll into balls. Store in the fridge or freezer
