Method
Preheat oven to 170°C and line a 20cm x 20cm baking tray with and set aside. Combine oats, puffed quinoa, pepitas, cranberries, coconut and cinnamon in a large bowl and mix together.
Heat coconut oil, peanut butter, honey and vanilla in a saucepan over low heat for 2-3 minutes, then remove from heat. Pour the wet ingredients into the dry ingredients and mix well. Press into the baking tray and bake for 15-20 minutes, or until golden.
Once cooked, let cool completely before slicing into 10 bars. Store in an airtight container.
