Dukkah and Mustard Veggie Tray-Bake

Vegan, Gluten Free, Nut Free

Our Dukkah and Mustard Tray-Bake is the perfect addition to any weeknight meal. I's such an easy and delicious way to sneak a few veggies in! This dish would also pair well alongside steamed grains or a fillet of baked fish...it's so versatile!  

 

Serves: 4 as a side | Time: 10 minutes + roasting time

Ingredients

Tray-Bake:

  • 1 red capsicum, sliced into 2 cm wide strips
  • 1 yellow capsicum, sliced into 2 cm wide strips
  • 1 red onion, sliced into wedges
  • 1 eggplant sliced into 2 cm wide wedges
  • ½ cauliflower, cut into small florets
  • 2 garlic cloves, crushed
  • x1 400g tin chickpeas, drained
Dressing:
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp wholegrain mustard
  • 2 tsp Goodies + Grains Dukkah + extra for serving
  • pinch of sea salt
Method
  1. Preheat oven to 190°C and line a baking tray with paper
  2. Transfer the sliced capsicums, onion, eggplant, cauliflower, garlic and chickpeas to a large bowl. Add the dressing ingredients and toss to combine, ensuring everything is evenly coated.
  3. Spread the contents on the lined baking tray and bake for 30-40 minutes, turning over at the half way point (approx. 15 mins)
  4. Remove from the oven and finish with a sprinkle of Goodies + Grains Dukkah
