Dukkah and Mustard Veggie Tray-Bake

Our Dukkah and Mustard Tray-Bake is the perfect addition to any weeknight meal. I's such an easy and delicious way to sneak a few veggies in! This dish would also pair well alongside steamed grains or a fillet of baked fish...it's so versatile!

Serves: 4 as a side | Time: 10 minutes + roasting time
Ingredients
Tray-Bake:
- 1 red capsicum, sliced into 2 cm wide strips
- 1 yellow capsicum, sliced into 2 cm wide strips
- 1 red onion, sliced into wedges
- 1 eggplant sliced into 2 cm wide wedges
- ½ cauliflower, cut into small florets
- 2 garlic cloves, crushed
- x1 400g tin chickpeas, drained
Dressing:
- 2 tbsp olive oil
- 1 tsp balsamic vinegar
- 1 tsp wholegrain mustard
- 2 tsp Goodies + Grains Dukkah + extra for serving
- pinch of sea salt
Method
- Preheat oven to 190°C and line a baking tray with paper
- Transfer the sliced capsicums, onion, eggplant, cauliflower, garlic and chickpeas to a large bowl. Add the dressing ingredients and toss to combine, ensuring everything is evenly coated.
- Spread the contents on the lined baking tray and bake for 30-40 minutes, turning over at the half way point (approx. 15 mins)
- Remove from the oven and finish with a sprinkle of Goodies + Grains Dukkah
