Dukkah Zucchini Slice

We’ve put our own twist on the humble zucchini slice. The simple addition of our well-loved Goodies and Grains Dukkah takes this recipe to the next level. It’s packed full of vibrant flavours and nourishing ingredients…we’re sure it’ll be a crowd-pleaser!
Serves: 6-10
Time: 10 minutes prep + 40 minutes cooking
Ingredients
- 6 eggs
- 1/4 cup plain flour (or gluten free flour)
- 1/4 cup olive oil
- 3 large zucchini (grated)
- 1 carrot (grated)
- 1 brown onion (finely diced)
- 1/2 tsp sea salt
- 1 tbsp Goodies and Grains Dukkah
- freshly cracked pepper
Method:
- Preheat oven to 190 °C and line a 30cm x 20cm dish with baking paper
- Beat the eggs in a large bowl, then mix in the flour and stir until smooth.
- Add the oil, zucchini, carrot, onion, dukkah, salt, and pepper to the wet mixture, and stir to combine.
- Pour into the baking dish and bake for 30-40 minutes, until golden brown
