Ferrero Rawchers

Makes: 30 | Time: 45 minutes | Vegan | Gluten Free
Ingredients
Filling:
300g hazelnuts 
360g medjool dates, pitted
80g Goodies and Grains Peanut Butter (or hazelnut butter)
30 hazelnuts
Coating:
200g vegan chocolate
125g hazelnuts, crushed
Method:
  1. Place all filling ingredients (expect 30 hazelnut) in a food processor and blend on high speed for 3-5 minutes, or until everything is combined. 
  2. Transfer mixture to a large bowl and begin rolling into balls; approximately 2 tsp in size. Take a full hazelnut and place inside each ball. Repeat for the remaining ingredients. 
  3. For the chocolate coating, place the chocolate in small saucepan over low heat. Once melted, remove from heat.
  4. Dip each ball into the melted chocolate, then coat in crushed hazelnuts. Repeat for remaining balls, then place in fridge to set for 1 hour.
