Festive Israeli Cous Cous Salad
This really is the perfect festive salad. The colours scream Christmas time. Perfect to serve alongside roasted veggies and meat, on Christmas day. This recipe is easy, fresh, filling and most importantly delicious!
Serves: 6 to 8 people
- Juice of 1/2 lemon
- 1/3 cup of extra virgin olive oil
- Cook the cous cous as per instruction on the packet. We recommend using vegetable stock instead of plain water, for added flavour.
- Fluff the cous cous in a bowl and mix through the herbs, spring onion, pistachios and dried fruit.
- Toss through olive oil and lemon juice. Season with salt to taste.
