Pork and Dukkah Sausage Rolls

Ingredients:
500g pork mince
1/2 red onion, grated
1 small garlic clove, minced
1 carrot, grated
1 zucchini, grated
1 cup fresh breadcrumbs
3 tbsp parsley,
chopped2 eggs
3 tbsp
Goodies and Grains Dukkah
Salt and pepper,
to taste2 sheets frozen puff pastry
, thawed and halved
Method:
Remove the frozen puff pastry sheets from the freezer to thaw, and slice in half. Preheat oven to 200° and line a baking tray with parchment paper. Place the pork mince, onion, garlic, carrot, zucchini, breadcrumbs and parsley in a large mixing bowl and stir to combine. Beat 1 egg and to the mixture. Add 2 tbsp dukkah, salt and pepper.
Divide the mixture amongst the sheets of pastry, placing it along one edge. Then roll to enclose (trim off excess as needed). Place the rolls, seam-side down, onto your lined baking tray. Whisk the remaining egg and brush onto the sausage rolls and sprinkle with the remaining 1 tbsp dukkah. Slice each log into 6 pieces and bake for 20-25 minutes, or until golden.
