Summer Fruit Granola Crumble

Given that summer has well and truly begun, we thought it’d be a great time to share the recipe for our Summer Fruit Granola Crumble. This isn’t your typical layered crumble, instead we’ve created the fruit and granola layers individually, which makes for the perfect meal prep option to last the entire week. This crumble works well for breakfast or dessert, and goes down a treat if you’re entertaining on a hot summer’s night!

We love using our Biodynamic Oats in the granola crumble as it provides a lovely crunchy texture…and not to mention the incredible health benefits of the whole grains oats!

 Granola Crumble

 Method

  1. Preheat the oven to 175°C. Arrange the sliced fruit in a baking dish and drizzle with vanilla, rice malt syrup (or maple syrup) and cinnamon. Toss to coat and bake for 15-20 minutes until soft and caramelised.
  2. Meanwhile, add all the crumble ingredients to a large bowl and mix well to combine (ensure the coconut oil is melted).
  3. Evenly spread the crumble on a lined baking tray, trying to keep it compact.
  4. Bake for 25 minutes, gently tossing once at the halfway point (12 mins) to ensure even baking.
  5. Once cooked, divide the poached fruit amongst four bowls and top with the granola crumble and a dollop of coconut yoghurt or ice cream.
