Vegan ANZAC Cookies


  • 1 cup plain flour, sifted 
  • 1 cup Goodies and Grains Instant Oats
  • 1/2 cup desiccated coconut 
  • 1/2 cup caster sugar 
  • 1/2 cup brown sugar 
  • 1/2 teaspoon salt 
  • 125g vegan butter 
  • 2 tbsp golden syrup
  • 1 tbsp water 
  • 1/2 tsp bicarbonate soda 


  1. Preheat oven to 180 degrees Celsius and line two baking trays with baking paper.
  2. Whisk flour, oats, coconut, sugars and salt together in a large bowl.
  3. In a seperate bowl, melt butter, golden syrup and water, then whisk in bicarbonate soda. 
  4. Pour wet ingredients into dry and combine until well mixed.
  5. Shape mixture into balls, place on tray and flatten slightly. Make sure to leave enough space in between to allow them to spread every.
  6. Bake for approximately 15-18 minutes, or until golden brown. Once cooked, let cool on oven rack and then enjoy!
