Vegan Peanut Butter and Chickpea Cookie Dough

Peanut butter and chickpea? It’s a pretty weird combo, but trust us…when you add other wholesome ingredients like almond meal and dark choc-chips, you’ll never be able to tell the difference! Not only will this cookie dough satisfy your sweet craving, but it’ll also provide an abundance of protein and fibre.
Enjoy this healthy cookie dough as a dessert, mixed into porridge or straight from the jar!
- Makes: 1 1/2 cups
- Time: 10 minutes
Ingredients:
- 1 ½ cup canned chickpeas, drained and rinsed thoroughly
- ¼ cup + 1 tbsp. Goodies Peanut Butter
- ½ cup almond meal
- 3 tbsp pure maple syrup
- 2 tsp vanilla extract
- ¼ cup dairy-free dark chocolate chips
- ¼ tsp cinnamon
- ¼ - ½ tsp sea salt
Method:
- Drain and rinse the chickpeas, and dry with a paper towel
- Add the chickpeas, peanut butter, almond meal, maple syrup, vanilla extract, cinnamon and salt into a food processor. Pulse until a thick dough forms.
- Transfer the dough into a bowl and mix in the chocolate chips.
- Refrigerate for 10-20 minutes
- Serve in small jars and enjoy!
Note: Refrigerate in an airtight container for up to 4 days.
