Vegan Rocky Road

Vegan, Gluten Free, Refined Sugar Free

We know it might seem a little early, but we can’t help but share our first Christmas recipe…Vegan Rocky Road! There’s so much to love about this festive sweet treat, from the crunchy roasted hazelnuts to the indulgent dark chocolate…and not to mention it’s also gluten free and refined sugar free!

This Vegan Rocky Road can be chucked together in no time, and also makes the perfect Christmas gift!

Makes: 14 x 15 cm loaf tin (if you only have a standard loaf tin, simply use half the tray, the mixture should be thick enough to hold its shape)

Time: 15 minutes + 1-2 hrs setting



  • 1/2 cup shredded coconut
  • 1/3 cup roasted unsalted peanuts
  • 1/2 cup roasted hazelnuts
  • ¼ cup sour cherries
  • 2 tbsp (20g) pepitas
  • 3 tbsp (30g) goji berries



  • 1 tsp pepitas, crushed
  • 4-5 freeze dried raspberries, crushed (or sub for goji berries) 


  1. Line a 14 x 15 cm loaf tin with baking paper
  2. Place all the filling ingredients into a medium sized bowl and stir together
  3. In a small saucepan, stir the chocolate, coconut oil, maple syrup and salt on a very low heat until melted
  4. Pour the chocolate mixture over the filling ingredients and stir to combine, ensuring that everything is coated in chocolate
  5. Place the mixture into your lined tin and sprinkle the crushed pepitas and freeze dried raspberries (or goji berries) on top
  6. Refrigerate for 1-2 hours
  7. Once set, remove from the refrigerator and cut into pieces, then enjoy!

Storage: Refrigerate in an airtight container for 1-2 weeks, or wrapped in plastic wrap and a layer of foil in the freezer for up to 1 month.
