Matcha, Pistachio and Fig Energy Bites

You can now spot matcha in just about everything from lattes to baked goods, and now we’ve got a recipe for something else…matcha energy bites! If you’re new to the world of matcha, here’s a quick overview of why this vibrant green powder is so popular. Matcha is made from finely grounding green tea leaves, providing up to 130 times more antioxidants than regular green tea. Other health benefits include: improved heart health, enhanced cognitive function and liver protection.

These energy bites are the perfect afternoon pick-me-up. Besides from the great health benefits from matcha, they also contain a variety of other nutrients from our Goodies LSA Blend, such as healthy fats, protein and fibre!

 

Makes: 12-14 balls | Time: 15 minutes

Ingredients:

7 medjool dates, pitted

3 dried figs

½ cup raw pistachios

½ cup raw cashews

2 tsp matcha powder

1 tbsp. Goodies High Protein LSA Blend

2 tbsp. desiccated coconut

¼ tsp nutmeg

1 tbsp. Goodies Coconut Oil

1 tsp Goodies Chia Seeds

pinch of salt

 

Method:

  1. Place all ingredients into a food processor and pulse until everything is broken down and combined
  2. Take a tablespoon of the mixture and roll into balls
  1. Place them in the fridge to chill and firm up, or enjoy straight away.
